100% Cabernet Franc grapes grown in our premium vineyards, located in the Casablanca Valley. Sourced from specific plots under a cool climate with maritime influence and a long growing season. The old granite soils provide the natural vigor required to quickly ripen crops early in the season. Fruit is typically harvested early to ensure balance between ripeness and natural acidity. Our grapes are picked by hand at optimum balance between fruit flavor, acidity and sweetness.
The harvested fruit was placed gently into a pneumatic press during 5 hours. Once the grapes were pressed, the clear juice was fermented at 57ºF/14Cº, to preserve the fruit expression. The resulting base wine was bottled with yeast addition, so the second fermentation took place in the bottle. After it, the bottles were placed on pupitres (A-frame racks) and riddled manually, to collect yeast lees within the neck of the bottle.
